- 2 pounds fresh strawberries, hulled and chopped


- 1 1/2 cups granulated sugar


- 1/4 cup lemon juice (freshly squeezed)


- 1 package (1.75 oz) fruit pectin (like Sure-Jell)


Instructions


1. Prepare the Strawberries:


Wash and hull the strawberries. Cut them into small pieces and place them in a large mixing bowl.


2. Mix with Sugar:


Add the granulated sugar to the strawberries and stir well to combine. Let the mixture sit for about 10-15 minutes. This allows the strawberries to release their juices.


3. Cook the Mixture:


Transfer the strawberry and sugar mixture to a large bowl. Add the lemon juice and fruit pectin. Stir to combine. Bring the mixture to a boil over medium-high heat, stirring frequently.


4. Boil and Thicken:


Once boiling, continue to cook for about 10 minutes, or until the mixture thickens. You can test the consistency by placing a spoonful on a plate and letting it cool slightly. If it holds its shape, it’s ready.


5. Jar the Jam:


Sterilize your jars and lids by boiling them in water for 10 minutes. Carefully pour the hot jam into the sterilized jars, leaving about 1/4 inch of headspace. Wipe the rims with a clean cloth to ensure a good seal.


6. Seal and Cool:


Place the lids on the jars. Process the jars in a boiling water bath for about 5-10 minutes to ensure they are sealed. Remove from the water and let them cool completely on a clean kitchen towel.


7. Store:


Once cooled, check the seals by pressing down in the center of each lid; it should not pop back. Store sealed jars in a cool, dark place. Refrigerate any unsealed jars and use them within a few weeks.
